Chocolate is the new black

Oh my god, these chocolate cookies made my day (read: whole week). This cookies are made from a LCHF-recipe so for those who are interested in making these, here is the recipe:

Bottom:
3dl almond meal
0.5dl sweetener (might be less depending on what sort of sweetener you use)
0.45dl cream
3 egg whites
Inside the cookie:
150 g Butter
100 g Philadelphia
0.2 dl cacao
0.5 dl sweetener (might be less depending on what sort of sweetener you use)
1 tsp vaniliapowder
2 egg yolks
100 g dark chocolate
1. Heat oven to 175degrees
2. Mix the ingredients for the cookie bottoms and make circles with the dough on a piece of baking paper, put the little round dough pieces in the oven for about 10 minutes.
3. Mix the butter with the philadelphia, and then mix it with the other ingredients. Put this deliciousness on the cookie bottoms and then shove it in the freezer for a while.
4. Melt dark chocolate and dip the cookies up side down into the melted chocolate.
Once all cookies are dipped put them in the fridge for about 30 minutes.
While you wait for these fabulous treats to get ready, we’d suggest you make yourself a nice coffee or pour a glass of red, whatever suits your mood, either goes fantastik with these little chocolate treats.
